The summer is flying by & the number of Cha Cha Hut Picnic! events is quickly dwindling. Here is our schedule for the remainder of the summer:

July 31: Picnic! at 1758 County Highway 41 Roxbury – 12pm until we run out of food

August 7: No Picnic! this weekend

August 14: Picnic! On The Road at Andes Community Day. We’ll be setting up in the parking lot of Hogan’s General Store (our future new location) & selling sandwiches, sides & pig wings. Stay tuned for details…

August 21: Picnic! at 1758 County Highway 41 Roxbury – 12pm until we run out of food

August 28: Picnic! at 1758 County Highway 41 Roxbury – this may be our final Picnic! of the summer so we’re considering a special evening grill/BBQ fest. Stay tuned for details…

September 4: Pork War – just a little idea we have. Might happen – might not. We’ll see…

As the weather has turned out hot but rain free, we’ve decided to stay open a bit later. Will be hanging out at Picnic! until at least 7pm.

There are only 5 Picnics! left this summer & this Saturday is one of them. We’ll be here serving all our the usual BBQ goodies plus debuting a new menu item: Pig Wings. Bite size pieces of porky goodness, these come in two sizes:

PIG WINGS
Small (5 – 6 pieces) …… 4.50
Large (10 – 12 pieces) ….. 8.50

Like our ribs, we’ll have a limited amount of Pig Wings this weekend as we try this new item out.

We’re bringing Picnic! back to the Hut’s HQ – 1758 County Highway 41, Roxbury – this Saturday July 17th. We’ll have all the Picnic! goodies you’ve come to expect including 8 racks of ribs. As the ribs have been selling out quickly, we suggest you order early if you want ribs this weekend. Call ahead & we’ll guarantee your order.

Our July 3rd Picnic! will continue to be in front of Cha Cha Hut World HQ – 1758 County Highway 41 – from noon-ish ’til we run out of food. We’ll be serving up all the BBQ treats you’ve come to love in a quiet outdoor setting. BBQ by the pound or a rack of ribs is the perfect treat to take to July 4th potlucks. We’ll give you directions for re-heating it on a grill or in the oven.

So after you’ve taken in the sights & sounds of the Street Fair, drop on down for the best BBQ in the area.

UPDATE: Alrighty then – it’s 10:30am & we’ve already got 2 Grande Gorges sold. It’s going to be a very interesting July 3rd Picnic! If you want a BBQ fix today – we STRONGLY suggest calling ahead & reserving food – especially ribs.

Our Picnic! permit arrived in the mail yesterday – so it is officially ON! Rain or shine we’ll be dishing up great BBQ starting at noon on Saturday June 19th at 1758 County Highway 41 (Cha Cha Hut World HQ). Probably going to keep the cook small-ish for the first outing, so call this week if you want to reserve an order. Yes – we will be making brisket, mac & cheese & ribs.

Beginning June 19th & running every Saturday during the summer, we’ll be risking our lives & house to bring you the return of The BBQ Too Dangerous For Bridge St.!

The Cha Cha Hut BBQ Picnic! will be a weekly rain or shine outdoor BBQ on the front lawn of Cha Cha Hut World Headquarters. That’s 1758 County Highway 41 Roxbury, NY (1/2 mile past our original location). Every Saturday at noon through Labor Day Weekend, we’ll start serving up our famous beef brisket, pulled pork, smoked turkey, ribs, our legendary smoked mac & cheese, BBQ beans & some sort of slaw. Of course, we’ll also have many of the house made sauces you know & love. There will even be meat by the pound & a limited number of BBQ feasts. Check out our Picnic! menu for the summer selections.

David & Lily model the latest in casual dining attire as they celebrate their 2nd anniversary with a bit of BBQ take out. The robes are from the House of Masserson (a.k.a The Roxbury Motel). Yes – they were wearing shoes not slippers.

As some of you may know – I am not a big rib fan. I know I have to make them because we’re a Q joint, but when it comes down to it I wish I didn’t. I have spent several years working on my rib technique & many of you have had great things to say about the ribs we serve. I thank you for that.

Lately – though – I have not been tremendously happy with the way my ribs have been turning out. It might just be me being obsessive. Or perhaps the change in weather has affected some of the cooking technique.

In any case, today begins Rib Quest: Tweaking the Cha Cha Hut Rib Technique. I promise no radical changes – same dry rub & no sticky ribs – but some behind the scenes cooking tweaks that hopefully will result in better ribs (& possibly an earlier Rib O’Clock).

If you drop by & get ribs during Rib Quest, I would greatly appreciate an honest critical review of the new rib results. I promise you will not hurt my feelings. I’m a cook – not a chef. I need feedback – good or bad – in order to make the best possible food I can.

For those among you who are BBQ geeks: Smoker @ 235. Ribs bone down for 3 hours. Double foil wrapped dry with meat down for 1/2 hour. Unwrapped, placed bone down back in smoker & finished for 2 hours. Better but thinking of returning to 3-1-1 but running the wrap dry.

We received an email this morning with the following line in it:

“Why don’t you tell everyone how you don’t like the locals and you don’t need them.”

Nothing could be further from the truth. Hey, we like the skiers that have been through. The hotel guest have been nothing but gracious. But when it comes down to it, our best and most rewarding experiences have been with the locals. We know we need the locals and are glad for every one that comes through our doors.

We strive to give every one a great meal at a great price in a clean and friendly environment regardless of where they come from. We don’t feel the need to talk about local vs non-local.

We believe in the local economy so much that we funded this entire restaurant with our own money and a small loan from a friend. We did not take funding from any other business or organization. We chose to open this business in Roxbury because this is where we live, we love it here and intend to live here the rest of our lives.

So you can believe the lies and rumors or stop by, have some great BBQ and find out the truth.
