<p><strong>August 14:</strong> Picnic! On The Road at Andes Community Day. Large (10 &#8211; 12 pieces) &#8230;.. 8.50</p>
<p>Like our ribs, we&#8217;ll have a limited amount of Pig Wings this weekend as we try this new item out.</p>

<p>Beginning June 19th &#038; running every Saturday during the summer, we&#8217;ll be risking our lives &#038; house to bring you the return of <strong>The BBQ Too Dangerous For Bridge St.</strong>!</p>
<p>The Cha Cha Hut BBQ Picnic! will be a weekly rain or shine outdoor BBQ on the front lawn of Cha Cha Hut World Headquarters. That&#8217;s 1758 County Highway 41 Roxbury, NY (1/2 mile past our original location). Every Saturday at noon through Labor Day Weekend, we&#8217;ll start serving up our famous beef brisket, pulled pork, smoked turkey, ribs, our legendary smoked mac &#038; cheese, BBQ beans &#038; some sort of slaw. Of course, we&#8217;ll also have many of the house made sauces you know &#038; love. There will even be meat by the pound &#038; a limited number of BBQ feasts. <p>As some of you may know &#8211; I am not a big rib fan. I know I have to make them because we&#8217;re a Q joint, but when it comes down to it I wish I didn&#8217;t. I have spent several years working on my rib technique &#038; many of you have had great things to say about the ribs we serve. I thank you for that.</p>
<p>Lately &#8211; though &#8211; I have not been tremendously happy with the way my ribs have been turning out. It might just be me being obsessive. Or perhaps the change in weather has affected some of the cooking technique. </p>
<p>In any case, today begins <strong>Rib Quest: Tweaking the Cha Cha Hut Rib Technique</strong>. I promise no radical changes &#8211; same dry rub &#038; no sticky ribs &#8211; but some behind the scenes cooking tweaks that hopefully will result in better ribs (&#038; possibly an earlier Rib O&#8217;Clock).</p>
<p>If you drop by &#038; get ribs during Rib Quest, I would greatly appreciate an honest critical review of the new rib results. I promise you will not hurt my feelings. <p>For those among you who are BBQ geeks: Smoker @ 235. Ribs bone down for 3 hours. Double foil wrapped dry with meat down for 1/2 hour. Unwrapped, placed bone down back in smoker &#038; finished for 2 hours. Better but thinking of returning to 3-1-1 but running the wrap dry.</p>

<p>We received an email this morning with the following line in it:</p>
<blockquote><p><strong>&#8220;Why don&#8217;t you tell everyone how you don&#8217;t like the locals and you don&#8217;t need them.&#8221;</strong></p></blockquote>
<p>Nothing could be further from the truth. Hey, we like the skiers that have been through. The hotel guest have been nothing but gracious. But when it comes down to it, our best and most rewarding experiences have been with the locals. We know we need the locals and are glad for every one that comes through our doors.</p>
<p>We strive to give every one a great meal at a great price in a clean and friendly environment regardless of where they come from. We don&#8217;t feel the need to talk about local vs non-local.</p>
<p>We believe in the local economy so much that we funded this entire restaurant with our own money and a small loan from a friend. We did not take funding from any other business or organization. We chose to open this business in Roxbury because this is where we live, we love it here and intend to live here the rest of our lives.</p>
<p>So you can believe the lies and rumors or stop by, have some great BBQ and find out the truth.</p>
