SUNDAY 09.25.11: DINE OUT IRENE BENEFIT FOR NY FARMERS
On Sunday, September 25, Cha Cha Hut BBQ is participating with New York City & New York State restaurants to donate 10% of our sales for the day to Just Food and GrowNYC to benefit NY area farmers hard hit by Hurricane Irene & recent flooding.
We will be working with area farmers to create sides & specials featuring local produce. We hope you’ll make a date to come to the Hut, eat and drink heartily & help our area farmers. While we do not take table reservations – we do encourage reserving food (especially ribs) for this special event.
In addition to our regular menu, we have the following Dine Out Irene Specials
Salt & Pepper Brisket – SOLD OUT
Simply seasoned brisket from Gladstone Farms. Have it on a sandwich, as a plate or by the pound.
Chocolate Black Bean Chili
Our famous veggie chili kicked up with our Catskill Mudd Rub & made with local onions & peppers.
Maple Apple & Pork Belly Ice Cream
You read that right! We make a decadent ice cream with Adirondack maple & mix in sauteed apples from our orchard plus crispy pieces of house smoked pork belly soaked in local apple cider & maple syrup.
Warm Organic Apple Sauce
Made with apples from Cha Cha Hut Acres’orchard. We simmer them with honey, brown sugar & cinnamon for the taste of apple pie without the guilt.
Napa Cabbage Slaw – SOLD OUT
We’re making our Mustard Slaw & Sweet & Sour Slaw today with local Napa & Red Cabbage.
Smoked Mac & Cheese
We’re making our signature Mac & Cheese today with local onions, peppers & garlic.
Southern Dill Potato Salad:
Organic potatoes from Cha Cha Hut Acres with celery & local onions in a sour cream & dill dressing. It’s a cool side for our hot BBQ. (Vegetarian)
Kickin’ Collard Greens
Our famous Kickin’ Greens made with local organic collard greens & local pork belly soaked in our North Carolina Vinegar sauce & smoked over local sweet oak.
Maple Espresso BBQ Sauce
The legend returns in a small batch made with Adirondack maple syrup & espresso from Irving Farms. Ask for a cup with your order or buy a limited edition bottle for $10.

New sauces: one hot & one hotter
We’re kicking off the summer season by bringing a bit of heat. We have two new sauces starting this weekend – our 1st hot sauce & the return of our hottest BBQ sauce.
ZyzzyB’s KAOS Sauce
Our 1st non-BBQ hot sauce. We take a healthy dose of chipotle peppers & combine them with garlic & a touch of sweetness for a medium hot sauce. It won’t kill ya – but it’ll make your lips tingle.
Shopsin Facemelter
The legend returns. One of our most requested Sauce of the Moment – it’s hot in a big way. Essentially a few hot sauces thinned out with cider vinegar & cut with black pepper. This is pretty much nothing but heat. Amazingly – it’s incredible on pulled pork! Not for children or the timid.
May 8th: Sugar & Spice Celebration

On Saturday May 7th, we’re celebrating all things sugar & spice with a variety of BBQ treats & desserts. A little something for the sweet tooth – a little something for the heat seeker.

We’ve been soaking pork belly in our Cider Soak for 3 weeks getting ready for Sugar & Spice weekend. Dusted with our new Sugar & Spice rub & slow smoked for 2 hours. Porky goodness.

It is Kentucky Derby weekend – so we decided a Derby Pie was in order. Bourbon, chocolate & walnuts make for a pie lover’s heaven.
Brown Sugar Ice Cream ….. $2/scoop
Sinfully rich ice cream made with a generous amount of brown sugar. Add a bit of candied jalapeno & a drizzle of Rock Candy BBQ Sauce for a spicy kick.

Our newest rub. Brown sugar & a blend of spices come together for a sweetness with a touch of heat. Great on pretty much anything.
Rock Candy BBQ Sauce ….. $8
It’s your candy baby – hot sweet & sticky. This sauce gets it’s sweetness & heat from our Cha Cha Hut Jalapeno Syrup. Our most unique sauce so far.
March 26 & 27: Celebrate Mud Month with Chocolate BBQ!

With the thaw in full force & spring moisture at it’s peak, we’re firmly in the midst of the start of Catskill Mud Month. Rather than complain, we’re embracing the mud with a weekend of chocolate infused BBQ.
The Sista Havana …….. $10
Our take on a Cuban sandwich. Low & slow pulled pork & chocolate dusted pork belly plus pickles, cheddar & our limited edition Mud On The Tires BBQ sauce. Served with BBQ Beans or Slaw.
Chocolate Pork Belly …….. $4
Our decadent appetizer returns this time cured in whiskey & maple with spices then dusted in our Catskill Mudd Rub (a limited edition chocolate BBQ rub) & slow smoked.

Even our Chili Of The Moment gets the Mud Month treatment as we take our Smoked Turkey & make a mole inspired chili.
Mud On The Tires BBQ Sauce …….. $8
We’re taking our Thundernagi sauce down by the lake where only 4 wheel drives can go. Punched up with chocolate & a blend of spices.
Double Chocolate Ice Cream …….. $4
Two decadent chocolates blended together in a rich creamy ice cream.
Mississippi Mud Brownies …….. $2
Dark chocolate brownies topped with marshmallow fluff & more chocolate.

Saturday 2.19.11: WHISKEY.MAPLE.LOCAL
In addition to our regular menu, we have the following specials this Saturday…
On Saturday February 19th, we’re cooking up a couple of local meat specials featuring whiskey & maple syrup. Quantities on these specials are VERY limited so we highly recommend pre-ordering as early as possible. We’ll be accepting pre-orders starting Thursday, February 17th.
Whiskey Soaked Brisket ………. $14
Local brisket from Gladstone Farm in Andes – soaked in whiskey & slow smoked using whiskey barrel wood from Tuthilltown Spirits in Gardiner, NY. Served with our limited edition Whiskey A Go Go BBQ sauce, corn muffin, choice of side & drink.
Maple Whiskey Pork Belly ………. $3
A decadent appetizer soaked in whiskey & maple syrup for 3 days & smoked to perfection over whiskey barrel wood from Tuthilltown Spirits in Gardiner, NY.
Whiskey Wood Smoked Pork Spare Ribs
We’ll also be using whiskey barrel wood to smoke our pork spare ribs on Friday & Saturday. Our usual menu pricing applies to these ribs (1/2 rack with beans or slaw $14 – full rack with beans or slaw $23).
Whiskey A Go Go BBQ sauce
We make this red sauce with a healthy dose of Jack Daniels. Simmered for an hour – then we put in the smoker for a bit. It’s a thick sweet & slightly smokey with a little JD kick at the end. We’ll have a small batch of To Go jars available at $11 each.
Maple Espresso BBQ Sauce
The legend makes a very brief return for this weekend only. French press coffee combined with maple syrup makes this one of our most requested sauces. Once you have it – you’ll be hooked. We’ll be offering side cups for those in the know & selling a small batch of To Go jars for $11 each.
